Ingredients:
- 175ml Milk (of your choice)
- 120g Baby Spinach
- 1 Banana
- 170g Honey
- 1 Egg
- 1 tsp Vanilla Extract
- 120g Butter
- 240g Flour
- 2 tsp Baking Powder
- 1/2 tsp Baking Soda
Optional Topping:
- Cream Cheese
- Raspberries
Method:
- In a blender, combine milk, baby spinach, banana, honey, vanilla extract, melted butter, and egg. Blend until smooth.
- Add flour, baking powder, baking soda, and optional salt to the wet mixture. Mix thoroughly.
- Pour the batter into a muffin tray and bake for 17-20 minutes at 180C.
- Let the muffins cool, then serve topped with a spoonful of cream cheese and a raspberry.
