Homemade Watermleon Ice Lollies and more

Here at eco rascals HQ, we know just how much an ice lolly can change a day. Our children associate them as treats and we’ve been learning every trick in the book to keep them healthy yet delicious.

As well as just making children happy, they can also keep us hydrated, help us reduce our waste by using up leftover fruit and veggies and they also help relieve pain from teething.

The lolly recipes below are suitable for children from around one year and up. For smaller children who are just starting out on their baby led weaning journey, we used the little food feeders and would freeze some breastmilk mixed with a fruit or vegetable that they enjoyed.

Fruit & Veggie Lollies 

The red one

1.5 cups strawberries
0.5 cups beetroot (cooked and chilled)
1 cup apple juice
1 tsp lemon juice

The orange one

1.5 cup mango chunks
1 cup orange juice
0.5 cup peach slices
0.5 cup grated carrot

The green one

0.5 cup coconut water
0.5 cup orange juice
1 cup baby spinach or kale
1 ripe banana
1 cups pineapple chunks 
1-inch fresh ginger

Method: For each lolly, you need to blend all the ingredients in a food processor until smooth and then freeze overnight. 

Serves: Makes 4 (each)

Prep Time: 10 minutes

Cook time: Freeze overnight

Ice lollies & fruit in a eco rascals bowl

Tropical Green Smoothie Lolly 

2 cups spinach
1 cup pineapple chunks
1 cup mango chunks
1 medium ripe banana, peeled
1 cup strawberries, blueberries or raspberries
1 cup milk of your choice
1 tsp of vanilla extract

Alternatively, if you have some of these ingredients already frozen, this makes a delicious green smoothie.

Serves: Makes 4 (each)

Prep Time: 10 minutes

Cook time: Freeze overnight

Pineapple & Coconut Popsicles 

2 cups coconut milk (or coconut water)
1.5 cups pineapple chunks
1.5 cups coconut chunks
2 teaspoons of lemon juice
Sweeten to taste with honey 

Either mix the ingredients in a bowl by hand and share between lolly moulds as show in the image OR blend for a smooth tasting ice lolly.

Serves: Makes 4 (each)

Prep Time: 10 minutes

Cook time: Freeze overnight

Watermelon Lollies: 

3 cups watermelon
1 cup coconut milk
1 cup kiwi (blended)

Method: Blend the watermelon and share between the ice lolly moulds. Place in the freezer for one hour. Remove and add a layer (approximately 50mm) of coconut milk. Put back in the freezer for one hour. Remove and add a thicker layer of blended kiwi. Freeze overnight before serving. 

Serves: Makes 4 (each)

Prep Time: 2 hours

Cook time: Freeze overnight
