Eco Rascals Veggie Burgers

A super simple vegetarian burger recipe - great for vegetarian families or families looking to reduce their meat consumption and increase their vegetable consumption with super simple and tasty kids recipes! Try this out and make sure to make enough for adults too.

Ingredients and Method

šŸ„„ Olive oil 1 tbsp

šŸ„„Spring Onion Ā½ cup (trimmed and thinly sliced)

šŸ„„Mushrooms 100g (washed and chopped)

šŸ„„ Carrot 100g (peeled, trimmed and grated)

šŸ„„ Salt and Pepper to taste

Combine and stir fry until soft


Add to stir-fried mixture


šŸ„„ Grated Cheddar cheese 50g

šŸ„„ Red pepper (de-seeded and chopped)

šŸ„„ Ground Walnuts 50g

šŸ„„ Soaked Chia Seeds 1 tbsp

šŸ„„ Bread Crumbs 50g

šŸ„„ Sweet Potatoes 200g (cooked and cubed)

šŸ„„ Soy Sauce 1 tsp

šŸ„„ Tomato Sauce 1tsp

Mash all ingredients together


Next Steps

By hand – divide the mixture into balls and shape it into burger patties

Coat each patty in all purpose flour

In a tray lined with baking parchment place the patties and drizzle with olive oil.

Bake at 170c (fan) turning halfway through until golden.

For Mum and Dad serve on a bed of lettuce in your preferred burger bun.

For baby serve patties on your favourite Eco Rascals bamboo plate.
