Ingredients and Method
🥄 Olive oil 1 tbsp
🥄Spring Onion ½ cup (trimmed and thinly sliced)
🥄Mushrooms 100g (washed and chopped)
🥄 Carrot 100g (peeled, trimmed and grated)
🥄 Salt and Pepper to taste
Combine and stir fry until soft
Add to stir-fried mixture
🥄 Grated Cheddar cheese 50g
🥄 Red pepper (de-seeded and chopped)
🥄 Ground Walnuts 50g
🥄 Soaked Chia Seeds 1 tbsp
🥄 Bread Crumbs 50g
🥄 Sweet Potatoes 200g (cooked and cubed)
🥄 Soy Sauce 1 tsp
🥄 Tomato Sauce 1tsp
Mash all ingredients together
By hand – divide the mixture into balls and shape it into burger patties
Coat each patty in all purpose flour
In a tray lined with baking parchment place the patties and drizzle with olive oil.
Bake at 170c (fan) turning halfway through until golden.
For Mum and Dad serve on a bed of lettuce in your preferred burger bun.
For baby serve patties on your favourite Eco Rascals bamboo plate.
