Banana and Oat Pancakes

1 ripe banana
25g rolled oats
1 egg
Instructions
Mash the banana with a fork, then add it to a bowl with the egg and beat together.
Add the oats to the mixture and stir to combine.
Grease the frying pan with a little butter and heat on a low heat.
Spoon a tablespoon of mixture onto the frying pan, and fry for 2 minutes on either side until golden brown.
Repeat until you run out of mixture. Serve with your choice of toppings, e.g. bananas, blueberries, etc.
Chocolate and Peanut Butter Pancakes

80g porridge oats
80ml milk
2 tbsp peanut butter
1 tsp vanilla
2 tsp cocoa powder
Instructions
Mash the banana and combine with the other ingredients (it’s easier to blend them together if you have a food processor).
Grease a frying pan with butter and heat on a low heat.
Add a spoonful of batter onto the frying pan and fry for two minutes either side or until brown.
Repeat until you run out of mixture. Serve with sliced bananas.
Pancakes with Peaches and Greek Yoghurt

100g self-raising flour
30g caster sugar
1 egg
75ml greek yoghurt
15-30ml milk
1 peach
Instructions
Sieve the flour into a bowl and mix with the caster sugar
Beat the egg and add to the dry mix along with the yoghurt and milk, combining into a thick batter
Heat a little butter in a frying pan over a low heat
Drop tablespoons of mixture onto the pan and fry until brown on both sides
Cut the peach into small pieces and serve on top of pancakes with a dollop of yoghurt
Chia Jam Pancakes

225g Frozen Raspberries
2 tbsp Chia Seeds
1 egg
120g self raising flour
190ml milk
Instructions
To make the chia jam, heat the raspberries in a small saucepan over medium-high heat and stir until the berries start to break down and bubble
Mash the berries to a mushier consistency and stir in the chia seeds - if it’s too tart, you can add a sweetener like honey or maple syrup
Remove from the heat and let cool so the jam thickens, then stir again and refrigerate in a sealed container
To make the pancakes, beat the egg and combine with flour and milk
Drop large spoonfuls of batter into a greased frying pan and fry over a low heat until golden brown on each side
Spread the chia jam on top of the pancakes and serve!
Red Velvet Pancakes

120g Plain Flour
2 tsp Baking Powder
1 egg
1 tbsp cacao powder
250ml milk
2 tbsp Butter
1 beetroot (roasted & pureed)
2 tbsp maple syrup
1 tsp vanilla extract
Instructions
In a bowl, combine flour, baking powder and cacao powder
In a separate jug, mix a beaten egg, milk, melted butter, beetroot and vanilla
Make a well in the dry mixture and slowly whisk in the wet ingredients until smooth and completely combined
Grease a frying pan and heat over a medium heat
Spoon a large tablespoon of batter into the pan and cook on both sides until golden brown
Serve with your choice of toppings, e.g. fruit and/or ice cream
