This is an incredibly easy and tasty recipe packed full of iron, protein at omega-3 fatty acids.
6 cherry tomatoes (4 finely diced and two for serving)
1 large potato, peeled and diced
1 handful of spinach
½ tin of canned tuna
1/2 red onion finely diced
1 clove of garlic (crushed)
1 teaspoon of fresh ginger finely diced
1 tbsp coconut oil for frying
Pinch of grated cheese
Boil the potato in a medium sized saucepan.
Meanwhile, fry the garlic, onion and ginger in the coconut oil for 3-4 minutes. Add the finely chopped tomatoes and tinned tuna to the hot pan and fry for a further 2 minutes.
Once the potato is soft, add the spinach and boil for a further 2 minutes.
Drain the water from the saucepan and mix in the ingredients from the frying pan along with a small knob of butter.
Using a masher, mash the ingredients together and serve in your organic eco rascals bowl with a pinch of grated cheddar on top and some tomato quarters for a contrast between warm and cold.
