Baby's First Christmas Dinner - Stuffing recipe

With a first Christmas baby in our house, we've been wondering what to feed him! I'm sure he'll love his finger foods of all our favourite - turkey, vegetables and potatoes but I also wanted to make him something delicious and unique too. 

Ingredients:

1 tablespoon olive oil

1 small onion diced

1 stick celery diced

1 medium carrot grated

1 tbsp raisins

2 tbsp oat flour

1 tsp thyme

1 tsp parsley

30 ml chicken stock

Method: 

Pre-heat oven to 180C.

In a large frying pan, fry the onion, celery and carrot until soft and golden.

Take off the heat and mix the remaining ingredients (raisins, oat flour, thyme, parsley and chicken stock) together in a large bowl.

Spoon the mixture into shapes of your choice and bake for 15-20 minutes or until crisp on the outside.

Serve on your favourite organic bamboo eco rascals plate and enjoy.
