Who doesn't like a chocolate cupcake?! Recently, I met Gemma and Jenny, the duo behind the wonderful blog and now hardback cook book Real Food by two Mums.
Heavily pregnant and way too tired to start changing my weekly menu, I let the cookbook sit nicely on the stand in the kitchen for a month. Assuming, like most books, it'd be impossibly difficult to start and my kids probably won't like any of the new recipes anyway.
Then, something clicked in me two Sundays ago (a kick up the bottom by my own Mum) and I started reading, baking and following the recipes. My girls have loved all the recipes in there and I'm loving the fact that I follow a recipe and it actually works - fancy that?!
So, with their wonderful permission, I wanted to share their chocolate cupcake recipe which are super simple to make with the kids and very tasty to eat.
1 can chickpeas, rinsed (or 1.5 cups cooked and drained - I used the rinsed can)
1/3 cup dark chocolate chips
3 free range and organic eggs
1/3 cup maple syrup
3 tbsp coconut oil, melted
1/4 cup raw cacao powder
2 tsp baking powder`
1 tsp vanilla extract or paste
1/4 tsp sea salt
1. Preheat the oven to 180°C. Grease or line a muffin tray with baking paper or dust out a silicone cupcake case.
2. Blend the chickpeas, half of the chocolate chips, eggs, maple syrup, coconut oil, cacao powder, baking powder, vanilla and salt together in a blender/food processor until smooth.
3. Pour the batter into the muffin trays and sprinkle the remaining chocolate chips on top. Bake for 20-25 minutes or until a toothpick inserted in the centre comes out clean.
Allow your children to enjoy this treat which is filled with protein, fibre and zinc.
When I made these, I took the time to measure all the ingredients out whilst the girls were non the wiser. I got them involved in putting them all into the blender and wizzing it up with me. They love watching 'their creations'!
