Valentine Strawberry Cheesecake

This is a wonderfully tasty cheesecake recipe which can be made with any variations of fruit. It's made with strawberries and real cheese, so totally healthy right? 


3 cups of crushed digestive biscuits

3/4 cup of melted butter

4 cups of strawberries (3 for the cake and 1 for serving)

½ cup of caster sugar

1.5 cups of whipping cream

3 cups of cream cheese


Crush the biscuits into small pieces (kids love to do this!) and pour the melted butter over the biscuits.
Place the biscuits evenly along the bottom of a cake tin.
Using a blender, mix the strawberries and the sugar so you get a puree.
Add the cream cheese to the strawberry mix and blend.
In a separate bowl, whip the cream until it’s thick and smooth.
Add the whipped cream to the blender and blend until the mix appears thick.
Pour the mix over the biscuit base and leave in the fridge for at least 12 hours.
Decorate with strawberries.

Get the kids involved:

This recipe calls for a number of different ways to get the children involved in the food preparation. What's better - no oven involved. 

The little ones can bash the biscuits to crumbs. Mix the butter in the biscuits. 

Help to add all the ingredients to the blender and push the button. If you don't mind too much about the style - they can also put the strawberry decoration on top.
