Courgette Mac n Cheese Slice: Ingredients

  • 125g of self raising flour
  • 400g of grated courgette/zuchinni
  • 300g of cooked macaroni pasta 
  • 120g of grated cheddar cheese
  • 250g of crumbed ricotta cheese 
  • 160ml of olive oil 
  • 4 eggs
  • 20g of cheddar cheese for topping
  • 1 x eco rascals lunchbox

Directions

Step 1

We're so glad that you've decided to follow our lunchbox ideas for toddlers series. Let's get started by pre-heating the oven to 180 degrees and cooking our macaroni pasta in a saucepan of water until tender. 

Step 2

Sieve your self raising flour into a large bowl and add your grated courgette, cooked pasta, cheddar and ricotta cheese and mix well.

Step 3

Now add your olive oil, eggs and salt and pepper to taste and mix until all well combined. 

Step 4

Line a large over proof dish with baking paper and then pour the cheesy pasta mixture. Using the back of a spatula, push the pasta down until all even. 

Step 5

Sprinkle the remaining 20g of cheddar cheese over the top of the pasta and bake in the oven for 40 minutes. 

Step 6
