Origins of the Piña Colada
The Piña Colada is a popular tropical cocktail that originated in Puerto Rico. Its exact origins are debated, but it is widely believed to have been created in the 1950s or 1960s by a bartender named Ramón "Monchito" Marrero at the Caribe Hilton's Beachcomber Bar in San Juan, Puerto Rico. Marrero was tasked with creating a new signature drink for the hotel and eventually came up with the delicious combination of rum, pineapple juice, and coconut cream.

You Will Need
To create the perfect tropical escape with this iconic and refreshing drink you will need fresh pineapple chunks or pineapple juice. Coconut milk or cream depending on how creamy you like your drink. You will also need unrefined sugar, whilst white sugar/caster sugar dissolves easily and would work fine, unrefined sugar, such as raw sugar or Demerara sugar, carries a richer and more distinct flavour. It can add subtle caramel or molasses notes, which complements this tropical cocktail. You will also need ice to give this creamy cocktail its signature chill.
Equipment
To make this infamous cocktail, you will need an immersion blender capable of blending ice. We used a NutriBullet!
Method
Let's get started!
Step 1: Pour in the pineapple chunks or juice, followed by the coconut milk and sugar into the blender.
Step 2: Toss in the cup of ice, which will give your Piña Colada its signature chill.
Step 3: Blend everything together until you achieve a smooth and creamy consistency.
Step 4: Grab your eco rascals bamboo cup and pour your delicious creation into it.
Step 5: Garnish with a pineapple wedge
Step 6: Sit back and watch your little ones enjoy!
Ingredients
1 1/2 cups of pineapple chunks
1 1/2 cups of pineapple juice
1 1/2 cups of coconut milk or cream (1 can)
3 tbsp unrefined sugar
1/2 cup of ice
Pineapple wedge (for garnish)

To make the Ice Lollies
Follow the above ingredients and method from step 1 -3, except add a cup of frozen banana chunks and add those into step 2.
When smooth, pour into ice lolly moulds and freeze for a minimum of 4 hours.
