5 simply pancake ideas for your baby

Pancakes make a perfect, versatile breakfast, snack or dessert for your little one. There are so many different toppings, sauces, and styles you can try out to change things up and introduce new textures and flavours.

Here are five super simple ideas you can try out with your little one...

1. Banana and Oat Pancakes

Banana and Oat Pancakes

Course: Dessert, Breakfast
Difficulty: Easy
Servings: Makes 5 pancakes 
Prep Time: 10 Minutes 

Ingredients:

  • 1 Ripe Banana
  • 25g rolled oats
  • 1 egg

Instructions:

  1. Mash the banana with a fork, then add it to a bowl with the egg and beat together.mixture and stir to combine.
  2. Grease the frying pan with a little butter and heat on a low heat.
  3. Spoon a tablespoon of mixture onto the frying pan, and fry for 2 minutes on either side until golden brown.
  4. Repeat until you run out of mixture. Serve with your choice of toppings, e.g. bananas, blueberries, etc.

 

 

Chocolate and Peanut Butter Pancakes

Difficulty: Easy
Servings: Makes 7 pancakes 
Prep Time: 10 Minutes 


Ingredients:

  • 1 Ripe Banana
  • 80g porridge oats
  • 80ml milk
  • 2 tbsp peanut butter
  • 1 tbsp vanilla
  • 2 tsp cocoa powder


Instructions:

  1. Mash the banana and combine with the other ingredients (it’s easier to blend them together if you have a food processor).
  2. Grease a frying pan with butter and heat on a low heat.
  3. Add a spoonful of batter onto the frying pan and fry for two minutes either side or until brown.
  4. Repeat until you run out of mixture. Serve with sliced bananas.

 

 

Pancakes with Peaches and Greek Yoghurt

Difficulty: Easy
Servings: Makes 4 pancakes 
Prep Time: 10 Minutes 


Ingredients:

  • 100g self-raising flour
  • 30g caster sugar
  • 1 egg
  • 75ml greek yoghurt
  • 15-30ml milk
  • 1 peach

Instructions:

  1. Sieve the flour into a bowl and mix with the caster sugar.

  2. Beat the egg and add to the dry mix along with the yoghurt and milk, combining into a thick batter.

  3. Heat a little butter in a frying pan over a low heat.

  4. Drop tablespoons of mixture onto the pan and fry until brown on both sides.

  5. Cut the peach into small pieces and serve on top of pancakes with a dollop of yoghurt.

 

 

Chia Jam Pancakes

Course: Dessert, Breakfast
Difficulty: Easy
Servings: Makes 10 pancakes 
Prep Time: 25 Minutes 

Ingredients:

  • 225g Frozen Raspberries
  • 2 tbsp Chia Seeds
  • 1 egg
  • 120g self-raising flour
  • 190ml milk

Instructions:

  1. To make the chia jam, heat the raspberries in a small saucepan over medium- high heat and stir until the berries start to break down and bubble.

  2. Mash the berries to a mushier consistency and stir in the chia seeds - if it’s too tart, you can add a sweetener like honey or maple syrup.

  3. Remove from the heat and let cool so the jam thickens, then stir again and refrigerate in a sealed container.

  4. To make the pancakes, beat the egg and combine with flour and milk.

  5. Drop large spoonfuls of batter into a greased frying pan and fry over a low heat until golden brown on each side.

  6. Spread the chia jam on top of the pancakes and serve!

 

 

 

Red Velvet Pancakes

Difficulty: Easy
Servings: Makes 24 pancakes 
Prep Time: 20 Minutes 

Ingredients:

  • 120g Plain Flour 
  • 2 tsp Baking Powder
  • 1 egg
  • 1tbsp Cacao Powder
  • 250ml milk
  • 2 tbsp Butter
  • 1 Beetroot (roasted and pureed)
  • 2 tbsp Maple Syrup
  • 1 tbsp Vanilla Extra

Instructions:

  1. In a bowl, combine flour, baking powder and cacao powder.

  2. In a separate jug, mix a beaten egg, milk, melted butter, beetroot and vanilla.

  3. Make a well in the dry mixture and slowly whisk in the wet ingredients until smooth and completely combined.

  4. Grease a frying pan and heat over a medium heat.

  5. Spoon a large tablespoon of batter into the pan and cook on both sides until golden brown.

  6. Serve with your choice of toppings, e.g. fruit and/or ice cream.
