Let's try these delicious cauliflower, broccoli and cheese fritters out for your baby. 

Cauliflower, broccoli, and cheese fritters offer a nutritious and palatable option for baby-led weaning (BLW) at six months and beyond.

These fritters are packed with essential vitamins, fibre, and calcium to support healthy growth and development.

The soft texture of steamed and grated vegetables makes them easy for little ones to grasp and nibble, promoting fine motor skills.

The combination of flavors, enhanced by the cheese, encourages a diverse palate. Additionally, these fritters are customisable and can be altered to suit individual tastes and ages.

As a versatile and nutrient-rich finger food, cauliflower, broccoli, and cheese fritters are an excellent choice for introducing solids in a baby's journey towards independent eating.

 Cauliflowr fritters

Makes 12-15 Fritters

Ingredients:

2 eggs 
250g cauliflower 
125g broccoli
125g self raising flour 
175g grated cheddar cheese 
Salt and Pepper to taste

Instructions

1. Prepare the broccoli and cauliflower - boil or steam until al dente and finely chop once drained. 

2. Beat two eggs in a large mixing bowl together until well combined. 

3. Add the flour, broccoli, cauliflower and cheese and mix together. 

4. Heat a little oil in a frying pan and scoop out the mixture and fry like you would a pancake 

5. Make sure the pan isn't too hot so the fritter can cook all the way through without burning the outside. 

If you want to enhance the flavour, after step three, you can add in optional seasonings such as salt, pepper, lemon zest, parsley, chives, garlic, curry powder or paprika to name just a few.

As always, serve up your baby's food on one of eco rascals bamboo plates
