Freezer Friendly Finger Foods - Three Ways

Cook once and eat twice with our delicious freezer friendly finger foods. Batch cooking has so many advantages and people who batch cook tend to have healthier meals, save money and save time!

Our three recipes below make the perfect main dish and can be accompanied with other simple finger foods such as cucumber, cooked carrot batons, peas, cheese, blueberries etc.

Broccoli and Cheese Mini Muffins 

Broccoli and Cheese muffins

Ingredients

1 1/4 cup of broccoli cooked and mashed
1 cup of grated cheese
1 cup of wholemeal flour
1 cup of self raising flour
1 egg
1 cup of milk of your choice
2 tbsp olive oil

Method

Mash all the ingredients together in a large mixing bowl and divide into muffin cases. 
Cook for 18 minutes at 180 degrees
Store in the freezer for up to 3 months.

Sweet Potato and Apple Fritters

Sweet Potato and Apply Fritters

 

Ingredients

2 large apples grated
500 grams sweet potato cooked and mashed
1 cup self raising flour
1 egg
1/2 tsp ground sage

Method

Mix all the ingredients together in a large mixing bowl. Divide up into large tablespoon patties and fry in olive oil until golden brown.
Stores in the freezer for up to 2 months.

Freezer Friendly Fish Sticks

Freezer Friendly Fish Sticks

Ingredients

1 pound cod fillets
1/2 cup all purpose flour
1 egg
1/2 tsp garlic powder
1/2 tsp thyme
(salt and pepper to taste 

Method

Cut the cod fillets into 2cm x 5cm strips
Season with salt and pepper for kids and adults over 4 years old (to taste)
Combine the garlic powder and thyme and mix well
Coat the cod in the all purpose flour
Place the floured cod into the beaten egg
Dip the egg coated cod into the garlic powder and thyme mixture
Freeze uncooked for up to one month
When ready to eat, cook from frozen for 18-22 minutes and until golden brown.
